I have been a little busy this week. It seems October comes and goes in a flash. It truly is the kick off to the holiday season. Between the hustle and bustle at the kids school plus keeping up on the home front, I feel like I am spinning on the Tea Cups at Disneyland {mind you, I get motion sickness}. This is that kind of week. Although it is busy and a bit chaotic, I still feel extremely blessed to be where I am {as my children are tossing a football and screaming while chasing each other through the house}. It may be a loud and messy house, but it is mine. I am lucky. I can clean while they sleep, right? icon smile Bee Inspired    Photography

So the point of this email is to share something that I think is important. A couple of weeks back we had professional portraits done. This is a photographer that we have used in the past but it has been a couple of years. I have watched her grow and by being her friend on Facebook, I have felt her infectious energy in all of her posts {reason 101 why I love Facebook}. I really love photos. I try and take as many as I can but I am not a pro. Occasionally I get a really good photo that makes my heart skip a beat. Professional photographers, those that make it their craft – capture so much more. Everyone may not agree but for me, this just brings oodles of smiles and a very happy heart. I love to capture moments. So today, I viewed my proofs from Studio KYK Photography and I was smitten. Now, as an amateur paparazzi photographer, I wanted to share this cute lil’ shot of my youngest. I snapped this yesterday at Apple Hill.

Night Owl Cookies

If you follow my Facebook you will most definitely see a pattern here. I like owls. I think they are so cute in all of the latest and greatest trendy ways that they are popping up. Etsy has them all over the place, Target showcases them on bedding as does Pottery Barn Kids. I came across this super cute and fun way to make owl cookies last year. I stuck the recipe aside and swore I’d come back to it. Well it took me a year but I finally made them today. They came out super cute! This fun little recipe came from Bright Ideas. They have loads of great ideas for your holiday sweet tooth.

Ingrediants

  • 1 roll (18 oz.) refrigerated sugar cookie dough
  • 1/4 cup flour
  • 1/3 cup cocoa powder
  • 20 whole cashews
  • ¼ cup chocolate frosting
  • ½ cup M&M’S® Brand Peanut Chocolate Candies
  • 2 cookie sheet pans
  • Plastic wrap paper
  • Resealable plastic bag

Directions

1. Divide the sugar cookie dough in three pieces. Knead the flour into one piece of cookie dough until smooth, set aside. Combine the remaining two pieces of cookie dough and knead in the cocoa powder until smooth, set aside.
2. Roll the lighter colored cookie dough into a 1-inch round log about 10 inches long, and move it off to the side. Roll out the chocolate cookie dough on a lightly floured surface to a 10 x 4-inch rectangle. Place the light colored log of cookie dough on top of the chocolate rectangle. Wrap the chocolate cookie dough completely around the lighter colored log. Pinch edges to seal and roll the log smooth. Wrap in plastic and refrigerate for at least 30 minutes.
3. Preheat the oven to 350°F. Cut the cookie log into 1/4-inch slices. Place 2 slices, side by side, on sheet pans. Press a cashew into cookie at the point the slices touch. Repeat with remaining cookie slices. Bake for approximately 8-11 minutes, or until cookies are just beginning to golden. Remove from the oven and transfer to a wire rack to cool.
4. Spoon the chocolate frosting into a resealable bag and snip a small corner from bag. Using the photograph as guide, pipe eyelashes and a dot to secure candies. Add the M&M’S® Brand Chocolate Candies for eyes.

These were pretty easy to make. The part that was the most difficult was when I was merging the two doughs together. The chocolate one kept sticking to my counter. I had to use lots of flour and really baby it while rolling the two together. Otherwise these were fairly simple and so cute! My 5 year old loved sticking on the eyes (which I also changed to Peanut Butter M&M’s). What do you think? Are these a fun and creative Fall cookie?

Bee Inspired – Rainy Day

I am having one of those super busy, company coming over, baking for a cake walk for our Fall Festival tomorrow kinda days. Just busy. But I am also enjoying the feeling of being oh so domestic while it is dark and cold outside. I will say, I enjoy the rain most when I am not in it! We do have to venture  out for a flag football game this afternoon. I am hoping that the rain holds off but if not, we will just smile and sing & dance in the rain I suppose icon smile Bee Inspired   Rainy Day Mother Nature always wins.  I wanted to share a fun quote about the rain today ~ how are you spending your weekend?

Bee Green – Bee Safe, E.coli in reusable bags

I have become oh so good at reusing my own bags. I would rather walk out with my hands full of stuff then use a plastic bag. Anyway enough about me and how great I am at using my own bags icon smile Bee Green   Bee Safe, E.coli in reusable bags Did you know that reusable bags are also a perfect host for E.coli and other nasty microbes? Yep, seems that a little research was done by the American Chemistry Council and out of 84 bags tested, 12% tested positive for E.coli. A couple of tips for keeping these germies away?

  • Dedicate bags to certain items such as meat. As you would a cutting board.
  • Wash your bags with laundry soap and allow them to air dry.

Remember though, using these bags even with this added risk is still a much better bet as far as saving our planet — one bag at a time. On this same note, I just saw a sign at WalMart that said they would no longer be using plastic bags. They will offer their reusable totes for a small fee.

Bee Organized – The Playroom

Today I posted a question on Facebook — what is the thing in your house that you need to organize. Well several of you came back with the playroom as your choice. Fortunately for me, I just did a good little cleaning in mine last week. We had company coming. Our playroom also serves as a guest room {complete with an air mattress! So cozy eh?}. I have had the room organized for quite some time but every now and again, I have to go back through and re-sort & purge. So a little something about my playroom: We have an overabundance of Car’s toys. My 5 year old is obsessed. These can be a little harder to purge! I am guessing that each of you have something that seems to dominate your playroom or kids toy collection as well? Do tell — I am curious!

A few key items for organizing a playroom:

  • You will need to stock up on storage containers. I have a hodge-podge but I do love baskets and canvas totes.
  • Keep like items together ~ cars, art supplies, books, games, puzzles, etc.
  • Do not I repeat DO NOT keep those Happy Meal toys! They are bad news. They end up in landfills in tiny pieces. I know, this is a tough one. Kids love that stuff. If anything, just make sure to purge it every now and again. Another idea for these items? I have heard that people are using them as Geo Caching items. Click here for more info on that activity.
  • Purge: I would recommend going through your child’s toys every 3-6 months. Donate what you can. Another tip, do this when they are NOT home or when they are sleeping. If you don’t, they will decide that they need “everything” you want to purge and then you will keep it. Guess what? They still won’t play with it. Purge!
  • Give items to charity or perhaps you can hand things down to someone who might get more our of it then your own kids did?
  • Bulletin boards: A great way to display kids art.
  • Armoires: A great storage solution for TV’s, video game consoles, etc.
  • Match items: This helps make a room look put together, even if it’s not icon smile Bee Organized   The Playroom Go with a theme or neutral scheme.

Fun extras:

  • Use chalkboard paint
  • Hang your kids art at part of the decor, use frames without glass for an easy “change”.

These are my best tips for getting your playroom in tip top shape. I did not label my baskets. My kids are old enough that they know that what comes out, must get put back where it came from. This of course is a work in progress! You can label your things with either a little sign or even use photos to help younger kids remember where things go.

  • IKEA — This is where the magazine {aka – coloring book holder} and large wall unit came from.
  • Target — Baskets, totes & decor
  • Lowes — Also full of storage and organizational stuff {think closets!}
  • Wal-Mart — More baskets, totes, decor, etc.
  • Land of Nod — Pricey but oh so fun!
  • Pottery Barn Kids — oo la la! I love this site.

Spelling Bee

When you have kids – especially kids in school, you realize that they each learn at their own speed and in their own way. I have a second grader and a kindergartner.  I have watched them each have their strengths and weaknesses as they have grown. School is a little bit different though, there is more pressure to be on the same learning curve. Well I am here to tell you that it doesn’t always work in your {or your child’s} favor. I try and preface that we all learn differently when my second grader feels discouraged. Math is an easier subject for him, reading takes a lot more work. I am a strong and fast reader but I am lousy at math. These are the life lessons I try and teach. We are all unique and learn differently. So that being said, my kindergartner is honing in on his fine motor skills {aka – writing} but he is all over reading and spelling. Yesterday he asked how to spell, “clean”. So I spelled it and he wrote it. And then he said, “Now I need to add an x to make it cleanx”. Um, that is a whole other word. So we spelled “kleenex”. My heart bursts a little when I see my children want to do well in something. Watching them succeed is a whole other extreme. It makes me a wee bit emotional. So here is what he did. It seems so simple but it really is BIG!

Now I will also share this with you — this $4.00 white board from Target has been such a hit in my house. I bought one for each of the boys and they LOVE to create, spell, etc. on them. It was a very worthy investment.

Bee Inspired – Give Thanks Gratitude Board

In my never ending blog surfing, I found this great idea. I can not wait to make my own! I think we need to instill in our kids that there is so much to be thankful for.  They have so much and want for little it seems. I know a lot of this is just a sign of the times, etc. but still. Reminding them of how lucky and blessed they are for the little things is always good practice. So if you want a fun activity to do with the kiddos, see if you can recreate this Give Thanks Gratitude Board that Jelly Bean Junkyard is sharing on her blog. What a fun site and the name? Caramel Apple French Toast

I had company over yesterday {which is just another excuse to cook!}. I decided to make this delish recipe that used to be my Christmas morning dish. It’s been a couple years since I made it {because I switched to a different recipe that was without apples as per my little ones request} but it’s yummy. Fairly simple too. I love any recipe that you can make ahead and cook later. I happened to have a loaf of Texas Toast {aka – french toast bread} in the freezer and apples, pecans, etc. readily available. Caramel Apple French Toast – from Serenity, A Bed & Breakfast, Petoskey, Michagan

4 large Granny Smith Apples
1 tsp cinnamon
Sugar to taste (optional)
3/4 c packed brown sugar
3 T light corn syrup
3 T butter or margarine
3/4 c walnuts or pecans (I used pecans)
12 slices firm white bread (I used Texas Toast as I had it on hand)
3 eggs, beaten
1 1/4 c skim milk
1 t vanilla
1/4 t nutmeg

  • Peel, core and slice apples. Place in a medium size skillet. Pour 1/2 cup water over apples. Simmer 4-5 minutes until apples are softened.
  • Drain in colander, place in a bowl and gently mix in cinnamon and sugar if apples are tart.  Set aside.
  • In the same skillet, combine brown sugar, corn syrup and butter. Cook and stir over medium heat until sugar melts and mixture just begins to come to a slow boil. Pour into a 13×9 into baking dish. Sprinkle with nuts.
  • Place 6 slices of bread on top of syrup and nuts. Divide apples among bread slices and top with remaining 6 slices.
  • Whisk together eggs, milk, vanilla and nutmeg. Pour over “apple sandwiches”. Cover and refrigerate overnight.
  • In the morning, uncover and bake at uncovered at 325 degrees for 40 minutes.
  • Remove from oven, cover with a serving platter and invert. Cute each sandwich in half diagonally  and serve with vanilla sauce.

Vanilla Sauce

1/2 c sugar
1 T corn starch
2 T butter or margarine
1 T vanilla

  • Mix sugar, cornstarch and 1 cup water in a small saucepan. Cook, stirring often over medium heat until thick and bubbly.
  • Remove from heat, add butter and vanilla. Stir until butter melts.

This is a great dish to serve at a brunch or holiday breakfast.
